    • Thai-style steamed fish with toasted sesame seeds

      As I sit thinking what to write, I thought why not browse FB and see what are people up to on this beautiful Saturday afternoon. Some are holidaying, some are gossiping, while others are celebrating, a few are physically training. No matter what the reason is, all are happy. All of them leave their worries behind and do manage to smile when said ‘Cheese’ . I think that’s the beauty of weekend after a grumpy 5 days at work we look for a reason to smile. So, why does those 5 days make it so stress full that we barely have any energy left to even put a smile on our face which could actually help us look young and cheerful. Is it your boss or your long travel hours to work, or deadlines or the fact that you have to prepare for a long boring meeting?. No matter what the reason is we all look forward to that 2 days of bliss. So here is a simple weekend treat for you and your loved ones a recipe adapted from the BBC good food.

      Ingredients

      1. 2 Trout fillets
      2. 1 thumb size ginger cut to juliennes
      3. 2 cloves of garlic, crushed and chopped
      4. 1 fresh red chilly finely chopped
      5. juice of half lemon and zest
      6. 2 tbsp of soy sauce
      7. 5 drops of fish sauce
      8. baby pak choi 4 leaves/ chopped coriander leaves.
      9. 1 tsp toasted white sesame seeds

      Method:

      • Wash and cut the trout fillets in half
      • Place them in a foil packet in a steamer
      • Add the ginger,garlic and chilli.

      • Pour soy sauce and fish sauce.
      • Place the pak choi on top of the fish.
      • Loosely seal the foil packet making sure you leave enough space for the steam to circulate as the fish cooks. Steam for 15 minutes.
      • Heat a non-stick pan and add the sesame seeds, once they start popping remove and top it with the steamed trout.
