Batata Vada is a very popular snack in Mumbai, Maharashtra. This is easily available on the streets of India’s most busiest city, Mumbai and is enjoyed with a hot cup of Tea and Coriander Mint Chutney. This is basically a potato dumpling deep fried is a batter of gram flour. I had never tried this before until I saw a video on you tube and thought this would be a great snack to try on a sunny afternoon.
1. 4 medium sized potatoes boiled and coarsely mashed
2. 4 green chilies
3. 6 cloves of garlic
4. Thumb size ginger
5. 1/2 tsp of mustard
6. 1/4 tsp of hing (asafetida) for the potato filling , 1/4 for the batter.
7. 5 curry leaves
8. 1 cup of gram flour
9. Chili powder 1 tsp
10. Turmeric powder 1 tsp for the potato filling and 1/2 tsp for the batter
12. Oil for deep frying
13. Handful of coriander leaves.
14. 2 pinches of Soda Bicarbonate
Make a coarse paste of green chili, ginger and garlic. I used a Pestle and Mortar for this. You can grind this in a grinder if you wish to. In a pan heat oil on medium heat. Once the oil is hot enough, add mustard seeds and let them splutter. Now add the hing and fry for a minute. To this add the curry leaves and the chili ginger garlic paste. Saute this the raw smell is gone. To this add the mashed potatoes, turmeric and salt. Saute for couple of minutes until the mixture has well coated the potatoes. Add the coriander leaves and saute for a minute or two. Transfer this to a bowl and let it cool.
To prepare the batter: First add the gram flour, followed by hing, turmeric powder, chilly powder. Add water add whisk to get a smooth running consistency batter. Just before the potato stuffing add soda bicarbonate along with a spoon of hot oil. This will help the bicarbonate to react.
Heat oil in a Kadai on medium heat. Check if the oil is heated well by dropping a small portion of the batter in the oil. It should float immediately giving a brown color. Once the oil is heated add the potato stuffing to the gram flour batter and coat it well. Deep fry this until you get a nice golden brown color evenly. Your crispy Batata Vadas are ready. Enjoy with green chili chutney hot.
