Tadka Dal/Daal Fry as it is know is a very famous dish that you will find it all of the menu’s in the Indian Restaurant. This is a Punjabi dish and is very easy to prepare. It can be enjoyed hot with Rice, Chapatti or Roti. My dad loves this Dal. During Christmas time when the whole family gathers we generally tend to go out of dinner in the evening. This has been a tradition. We mostly go to Indian Restaurants that maintain high quality and serve the best Indian cuisine. So my dad mostly orders for a dal as a side dish and Tadka Dal is on the top five. This is a very light and comfort food that is easy to prepare and filled with nutrition.
1. 1/4 cup of yellow pigeon (Toor dal)
2. 1/2 cup of gram dal (Chana dal)
3. Onion medium sized finely chopped 1
4. Medium sized Tomato finely chopped 1
5. Green chili finely chopped 1
6. Cloves of Garlic 2
7. 1 teaspoon of red chili powder
8. 1/2 teaspoon of turmeric powder
9. Handful of coriander leaves finely chopped
10. 3-4 tablespoon of ghee (clarified butter)
11. 1/2 Teaspoon of Cumin seeds (Jeera)
12. Pinch of asafoetida (Hing)
13. 2 dried red chili.
14. Salt to taste.
Wash and soak Toor dal and Chana dal together for 3-4 hours. Pressure cook this for 3 to 4 whistle or till the dal is soft and cooked. I don’t have a pressure cooker hence I used and open pot to cook the dal on medium heat with 1-2 cups of water until the dal the soft and has cooked to the desired consistency. Mash it lightly with the back of the spoon and the dal should look like this. Keep aside. In a pot heat about 3 table spoon of Ghee. Once heated add the cumin and fry for a 2 minutes. Now add the chopped Onions and fry till they turn soft and light pink. Add the tomatoes and green chili and fry until the tomatoes have become nice and soft. To this add red chili powder and turmeric. Fry this for couple of minutes or until the masala starts leaving the ghee. Add the dal to this. Bring it to one boil. Add salt to taste and the chopped coriander leaves. Bring it to another good boil and take this off the heat.
Heat ghee in a pan. Once heated add the chopped garlic, whole red chilies and asofietida ad fry on medium heat until the garlic is crispy stirring in regularly to make sure it does not get burnt. Add this tempering to the dal. Your Tadka Dal/Daal Fry is ready to be served either with rice or roti.
