This Saturday is all about Italian cuisine. While I going through Facebook, and looking at the different places I visited last year, my eyes fell on some lovely Italy photos. It was almost last summer. Italy was beautiful and the sun was shining nice and bright. In Rome I found the people a little less hospitable, however Vatican City, Naples and Florence the people are as friendly as these beautiful cities. Looking forward to do more of Italy soon, probably Venice, Sicily and Sardinia this time.
Italians are very passionate about their food. I must say I enjoyed only of the most finest pizzas here. So here we go in memory of my Italy holidays Penne Pasta with homemade Pesto Sauce. Here I have only written about Penne Pasta. My next blog you will find how to make homemade Pesto.
1. Pesto Sauce
2. Penne Pasta (One portion based on the number for serving)
3. Extra virgin olive oil
4. Garlic cloves 3
5. Cherry Tomatoes 5
6. Button mushrooms 2
7. Single/low fat cream 1 tbsp
8. Salt and Pepper to taste
Heat water in a pan. Add a little olive oil and salt and bring this water to a boil. Add Pene Pasta and let it cook until 1/2 done.
Heat Oil in a pan on medium heat. To this add chopped garlic and saute for a minute. Add the cherry tomatoes and cook till the turn little mushy. Gently press them to break, this will allow the tomatoes to cook quicker. Now add mushrooms and saute. Add the 1/2 cooked pasta to the vegetables. Now add the pesto sauce and let it mix till it coats all the pasta well. Add a little water just to get some moisture. Now add some cream just to garnish. Add Salt and Pepper as per taste. Take it off from the heat and serve hot. Garnish with some grated Parmesan in required.
