Yet another sunny day in London and am loving every bit of it. Hubby not at home yipeee gives me the extra freedom and time. The extra time as always I used it to do some shopping and as always it was my laundry day. Glad I don’t have to wake up early tomorrow as its bank holiday Monday. Yet another reason to party. So I wind up my beautiful and warm Sunday with Fast n Furious 6 (Hot cars and even hotter men) and a wonderful Spinach n Chickpea money bag. 🙂
1. 1 can of Chickpea
2. handful of washed and dried baby Spinach.
3. Feta Cheese 10-15 cubes
4. Garlic 3 cloves
5. Filo Pastry
6. Salt and Pepper
7 Running Honey
8. Yogurt and Paprika powder
9. Butter melted 3 spoons
In a bowl mix together the chickpea, spinach and feta cheese. Grind this to a coarse paste. Now add salt and pepper and cloves of garlic and continue to grind. Until you get a good thick consistency. Take 2 sheets of filo pastry and dust off an additional flour that is in it. Cut them into square using a butter knife. Using a brush apply melted butter to the filo pastry. In the middle add a little of the ground spinach, chickpea and feta paste. Make sure you don’t add a lot as this will expand when heated.
Brush some butter an the outside of the money bag as well so that it get a nice golden color when done. Heat the oven to 180 degrees. Once the oven is hot add the filo parcel and let it cook for about 10 minutes. Your wonderful money bags are ready. Drizzle this with running honey and serve with yogurt powdered with paprika on the side.
