While KJ is enjoying the sun in India am having some time off to prepare a healthy breakfast my way. By my way I mean with the use of dairy products in my breakfast. Weekdays I just don’t find time to wake up and prepare a nice breakfast. Hence this weekend as its a Bank Holiday weekend in UK I thought of spoiling myself with a nice a hearty breakfast.
One must never skip breakfast as this is a very important meal and helps you to kick start your day. I read on a post in Facebook that skipping breakfast does not help us to loose weight, instead we gain weight as the food we consume after that directly turns in fat. Hence dear readers please do not skip breakfast. Eat Hearty and Healthy 🙂
1. Tomatoes on wine
2. Large mushrooms 2
3. Free Range/Organic Eggs 2
4. 1/2 Tbsp of Creme Fraiche
5. Butter Croissant 1
7. Olive Oil
8. Fresh Chives to garnish
9. Salt and Pepper as per taste.
Drizzle Olive oil in a non-stick pan and add the tomatoes on wine along with Mushrooms. Keep these whole. There is no need to chop them. Let this cook on low flame.To this add crushed black pepper and salt as per taste. While the veggies are getting cooked break 2 eggs in a pot and a good knob of butter as show below.
Keep the flame low for the egg to be scrambled however keep stirring. When its mid done take it off the heat scrap off all the extra dry bits of the scrambled egg that’s on the side of the pot and keep mixing again. When almost done add Creme Fraiche. Keep stirring the egg until to get a nice rich and creamy scrambled. Now add the fresh chopped chives a little of salt and pepper. Keep this aside.
Take the butter croissants. Cut them into half and half again. Heat a pan on low flame add the butter croissants and lightly heat it until warm and soft. There is no need to add oil and the croissants already have butter in them. Once the croissants are ready arrange the Tomato on wine and Mushroom on a serving plate. Followed by the butter croissants. Spread the scrambled eggs on top of the croissants. Your English Breakfast is ready to be served.
