Yesterday we had Kim visiting us after a long time. I was very exhausted after work and had very little interest to cook. But my spirits were high and I was thinking what would be better than just plain rice. Things like pasta, fried rice n noodles crossed my mind. I was not convinced with any of them and was thinking of rice with a twist.
As I was doing grocery shopping my eyes fell on some green springs of fresh mint. That’s it !!!! Walaa I found the perfect rice recipe for a perfect evening, Mint n Mushroom Jasmine Rice.
1. 1 1/2 Cup of Jasmine Rice
2. 4 Button Mushrooms
3. Half a cup of finely chopped Mint leaves
4. Hand full of Cashews
5. 1 medium size onion finely chopped
6. 2 cloves of Garlic finely chopped.
7. Whole cloves 5 and 1″ of Cinnamon stick
8. Oil for frying
Wash the Jasmine Rice under running water making sure all the starch is washed out. Once this is done soak Rice in luke warm water. In the meanwhile heat oil in a pot. Once oil is lightly heated add chopped onion. Let the onion cook until it turns transparent.Now add chopped garlic and fry for about 20 seconds until the raw smell is gone. Add the Whole cloves, Cinnamon Stick and Cashews. Fry the this lightly until the cashews get a light golden brown color. Add finely cut mushrooms. Saute for some time. Add the chopped mint leaves and let this fry for 5 minutes on low flame.
Drain the water from the rice and add rice to the pot. Stir in the Rice until it is well coated with the mixture as below. To this add 3 cups of water, using the same measure cup you used to measure the raw rice. Cover the pot cook for 5 minutes on low flame. Gentle stir rice and cook further until all the water is absorbed and the rice is fully cooked and looks fluffy. Serve this hot with any Thai Curry dish.
